Creamy Pumpkin Soup (Dairy Free)

Need some inspiration to grow pumpkins this summer? Let this ultra creamy pumpkin soup be your reason! It's  full of flavour and tastes amazing when made with home grown pumpkins plus it's dairy free so everyone can enjoy.   Ingredients 1 tbsp olive oil 1 onion peeled and finely chopped 1 teaspoon dried sage 3 carrots 7 cups pumpkin cubes (any variety will work, ensure the seeds and skin have been removed) 2.5 cups vegetable stock 1 cup coconut milk Salt & pepper to taste   Method  Place large pot over medium heat and add the olive oil.
